Dasher's Dark
- Style: Experimental Stout
- Batch Size: 23L
- Target OG: ~1.052
- Target FG: ~1.012–1.014
- Estimated ABV: ~5.2–5.4%
- Estimated IBU: ~30
- Estimated SRM: ~38–40 (deep black)
- Fermentation: 18–22°C (US-05); consider cooler if going drier
Grain Bill (Total ~4000g)
- 2250g 2-row pale malt
- 600g Munich malt
- 400g flaked oats
- 400g chocolate malt
- 250g roasted barley (Simpsons preferred)
- 100g crystal 80 (optional for residual sweetness)
Hops
- 28–30g Fuggle @ 60 minutes (bittering and aroma)
Yeast
- 11.5g SafAle US-05
Notes
- If mash pH seems low due to dark grains, consider 5g calcium carbonate or baking soda.
- Mash at 67–68°C for a fuller body.
- Chill and pitch US-05 around 18–20°C.
- Optional: swap US-05 for S-04 for more ester and body in future batches.
Commentary
- Designed as a session-strength stout with strong roasted and cocoa notes.
- Fuggle provides earthy balance without floral interference.
- Great winter ale base — spice additions possible later (cinnamon, star anise, etc).
